I'm wanting to build a linux server and have my windows computers store data there. Is this possible and should i use Samba?

Yes and Yes. You just set up Samba on the server (easy to do with something like Webmin or whatever) and it will show up like a normal Windows file share on the network.

If your running debian linux heres a really good guide (http://www.debianhelp.co.uk/samba.htm) on setting up samba.

I use this guide (http://hr.uoregon.edu/davidrl/samba.html) for setting up Samba. Of course, you can also refer to the official Samba site (http://www.samba.org/), whose documentation is quite nice.
