Will they have conflict with each other?

Joystick

It will work fine. The Joystick is most likely using some kind of bluetooth connection, while the other is for a 802.11b/g WLAN, which is a totally different thing.

If they're on the same frequency, they'll interfere. I'll do some research and check back.

You won't have any problems. The Freedom uses a technology called Frequency Hopping Spread Spectrum (FHSS) wherein it picks a 2.4GHz radio channel that is least populated. Therefore even if you have a microwave or 802.11b/g/n device in the same spectrum, it shouldn't be an issue.

My next question is has anyone used wireless joysticks before?

Have they some time where they dont function when you first grab ahold of them and start moving?

I'm wondering this because I have a wireless mouse that is my moms and if you havnt been using the mouse and you start to move it the cursor on the screen won't move for a short while.
