So it's now going to be November 25. My parents have a friend who is a judge. We're thinking of cool places to perform the ceremony since we can do it anywhere in NY state.

In general a Justice of the Peace (or a judge) performing your ceremony tends to be non-religious, rather than getting married by a priest, reverend, etc. that is a member of a specific religion. Legally there is no difference, it's just whichever you prefer.
