Hi right now im thinking of making a new PC due to my FPS being low on some games like 100 dropping to 40's it gets annoying X-D and i play at 3440X1440
im always a Intel Fan but i heard Ryzen is better now days and i dont know what CPU to get for Intel anymore due to there new ODD NAMES!!!
right now im thinking of

You are off to a good start, I'd get the Asus B550 board personally just to save a few bucks and no southbridge fan, but either is a good option -
I'd change the RAM for certain. Ryzen scales with faster RAM with tighter timings. The 5600 offers great 'bang for the buck'.
It is hard to beat Noctura for a cooler, the NH-U14 (I think) with two fans is a great option.
That corsair kit you have selected it perfect. Faster than that you get into the rate of diminishing returns but DDR 3600 is priced competitive and Ryzen will scale to it. The 5600X has huge efficiency advantages over just about anything else, if you are looking for a chip that is fairly easy to air cool and isn't too power hungry that's your best bet. The only thing I'd even consider from Intel has to be on the value end now, and that's kind of crazy, I never thought we would see it where Intel would have to cut prices, but if you can find a 10400F for under $150 and a reasonably priced board to pair it with you might save $150 and still have solid gaming performance but I feel like the AMD AM4 platform still have a little more to offer, PCIE 4.0 though not urgent, if you only build every so many years you might be happy to have it down the road, some of the optimizations they have for memory sharing across their infinity fabric looks really promising. Intel for is behind for the first time since the late 90's early 2000's but that said, they slashed prices and if you are looking to build as a really competent inexpensive gaming rig a 10400F isn't a bad chip for gaming.
i also heard that DDR5 is coming out around Summer??? should i wait a bit longer for it??
I think the most exciting application for the added RAM bandwidth is going to be for integrated graphics. For those using a dedicated GPU I don't think it's going to be as important.

Will the B550 or the X570 will support the 4 Gen CPU for AMD???
Yes. Both chip sets support the 5000 series processors. Your luck may vary on needing to update your BIOS for support though. I bought an X570 that worked out of the box.
Neither B550 nor X570 require a BIOS update to boot any Ryzen 3000, 4000, or 5000 CPU. But you should still upgrade for performance and stability.
What? My experience with 5900X + a Gigabyte x570 mobo would disagree - would not boot until it had a newer bios upgrade in place via using a 3000 series borrowed (or if I could have gotten the flash w/o CPU to work, that should have done it also)
