I already know how to turn things INTO a VCD, but if I have a VCD disk, how can I rip those down to AVIs or whatever?

You could rip an ISO and use something like d-tools or alcohol to mount it. Thats what I do anyways.

Really you shouldn't have to do anything. Stick the disk in and 'explore' it. The video files should be on there in the strange directory structure. A VCD (at least the ones that I've made) are just video files on a disk that are renamed, resized, and surrounded with the right other files, so that they can be standardized for players.

The complex part is just making it into an AVI. The easy part is dragging the file off of the disc.

Video Magic should work. They have a free trial download you can play with.
I used to use it to convert captured VCR movies into different formats, depending on where and with what equipment I would be using for my briefings.

Sorry I am no more help with this, but I just got back after a 12 month absence and I haven't gotten back into the groove with this program.

vcdtoolz, i believe, can turn 2-disc vcd's into 1/2 mpgs.

and for the question at hand

    convert vcd to avi

I use virtualdub for most of my conversions and no problems yet
