DVD Ripping Problem

I am working on a Documentary for school under which both would be legal... I need some footage that I really can only get off these DVD's.

I have read throughly through the XViD and DViX Articles, but none had the information I really need.

What I need is that after I rip the DVD to my computer to an IFO, I need MAXIMUM quality, uncompressed if possible. But in a readable format that Quicktime Pro can read so I can use it's settings to encode that into whatever I desire.

Anyone know what I can do? So far I am on my thrid try with DVDx 2.2 trying to encode what I need to XViD but Pirates of the Caribean took almost 7 Hours to complete only to be a horrible looking copy.

Ohh yes, and for some reason that XViD Bitrate Calculator doesn't work for me, when I run it - it says that I need to install some file, I forget what it was called though cuase I uninstalled the program.
