Whats the latest set of catalyst drivers that aren't beta or buggy? Also, will I have to do anything special to disable the nvidia display component thats automatically installed with the forceware drivers?

That's the latest Cats. But unless you have a x800, i would use the 4.6 which you can find at http://www.ati.com/support/products/radeonwinxppreviousdrivers.html

Forceware won't install any videodrivers if it isn't finding a Nvidia videocard on the system. Even if it tried, it would ask for your permission anyway.
