Anyone know of a program that will do this?

Okay lets say I have a HTML file that when I double-click brings up IE, while I want of course.
But I also need to edit it, so I right-click and select the second option (dreamweaver mx) to edit it, but as we all know waiting for the menu to popup and finding the option through all the junk be a pain.
So is there a program that if I hold down ctrl or some other button like Alt, that when I double click it will open up a different program from the usual?
