IP Spoofing

I am trying to validate the origination of an email I received. The email shows an IP address of a yahoo email that originated from a certain company I will call ACME. Now I have checked the header of the email to access the IP address which when using a site such as a whois.com type site it points to ACME company. MY QUESTION is can the average user SPOOF the ip address to make it look like the email is originating from the ACME company when in reality it is originating from a completely different location?

Now I am not looking for instructions on how to spoof, I am merely trying to figure out if it is worth the trouble for an average user to make this happen or if it's even possible by the average user. I am trying to basically figure out if my friend is still a friend or if my friend is really the person behind the fictitious email account stirring up trouble.
