Somewhere Between iTunes and CDeX

Ive just installed a fresh copy of windows XP on my machine and I am also just about to start ripping all my CD's back onto my Hard Drive.
Before I discovered iTunes I used to rip my CD's with CDeX because I could configure it to rip all the Tracks to My Music Folder in the following format

Artist - Album - Track .mp3
(so that I ended up with just my My Music folder with no sub folders but a nicely ordered selection)

The thing that annoyed me about this is that when I ripped a compilation usin the CDDB, CDeX would always put "Various Artists" as the Artist part and then the artist and track in the track part. When I started using iTunes it corrected this but always ripped them to subfolders for the album and artist with no way of changing it. Ok, now i need a go between with the custimizability of CDeX and the CDDB Capabilities of iTunes, please help!
