Raid (1) Drive Dropped

I run an office with quite a few PC's and a Mac on the network. All the machines are mirrored 1 Raids and seem to work o.k. and when something goes wrong with one of the drives you can usually replace it with a new drive and it rebuilds the raid on to it and boots fine. Just one of the machines runs Windows 2000 for a Presstek Polyester Printing Plate Server and about 2 weeks ago for no apparent reason we got the message that one of the Raid drives was dropped. When we removed each of the hard drives (in turn) the machine would not boot from either remaining drive. We have now replaced the Motherboard Bundle (Foxconn RC4107MA-E8KRS) and tried again (including low level formats and complete reloads and reformats) and just as we get to having Windows 2000 loaded we get the "dropped" problem or "Raid in a critical status" again. We've also tried formatting the 160Gb Maxtor Sata Drives to 100Mb instead to see if that helps but it doesn't. Does anyone have any suggestions as to where we are going wrong? At present we have restricted the loading of the operating system to both drives as a Raid array but maybe we should do this as a solitary IDE drive and when we have done all the updates then convert to RAid - problem being we know so little about Raid when it doesn't function corerctly.
