Best use of discs for.. (shock!) ..reliability

Wow - things have changed a bit round here since the KT7 heydays! Had to reregister, but nice to see a few of the old names still here.
Anyway, I was hoping someone might be able to help with some suggestions about how best to use multiple drives for data reliability. Any tips would be very helpful. Here's the scenario:
Standard PC (trusty KT7A-R ), Windows XP, used as a simple fileserver for small office. Currently has a single 20GB 5400 rpm Samsung drive for OS & data (single partition). Highpoint unused. I have just bought two identical Maxtor 80GB 7200RPM drives so that I can use the RAID1.
In your opinion which is the best option for data safety:
1) Ditch the original samsung, install everything (OS and data files) on the new RAID 1 array.
2) Install OS on the single samsung and use the RAID1 drives purely for user data
3) None of the above (Please specify!)
Safety of user data is the key concern, OS less so as long as it can be reinstalled without too much messing about.
So in short, is it better to use RAID1 for everything but incur the data risks (if any) of having OS on the same system as user data, or better to isolate the OS but at the risk of keeping it on a single drive?
Any help - or links for info - would be very much appreciated, and maybe this will help others who are trying to improve the reliability of basic PCs.
hehe.. three years ago I'd never have imagined I would be choosing RAID1 over 0 .... age does funny things to us I guess....
