Looking for any advice towards what for me is going to be a huge investment.

I can't advice any specific model but I would suggest getting a NAS (Network Attached Storage) instead of just an external HD, because of its flexibility and autonomy, not having to be connected to a (maybe dedicated) computer.
There is plenty of information online about NAS, I would take a look at those.
A cousin of mine has two Buffalo 1TB stations, NAS type too. He used them for his Church's network, and it's been working great for them for over a year now.
A good NAS contains the PSU and drive controller. You could run a RAID array in one if you want to, or just a bunch of drives. If I needed 1TB I would like to have 3x500GB in a raid5.
