Outlook 2007: Tale of the vanishing sent item!

A colleague is using Outlook 2007, with an IMAP account, I have specified a folder on the IMAP tree as the location for sent items to be stored.
When I compose and send an e-mail, sure enough a copy gets saved in the sent items folder... for about 1-2 seconds, at which point it vanishes without trace.
This folder *was* working last week, but now has decided to misbehave, I've looked and their are no rules on the account what so ever - no rules in Outlook what so ever either (except the default 'clear categories on all messages when they arrive - so you don't inherit the senders categorization of the message)
My short term fix was to create a rule which copies items on sending to a folder, I specified one not on the IMAP account, and sure enough items get copied there - so this is ok as a backup, but I still need to solve the 'vanishing after 1-2 seconds' problem
Does anyone have any ideas?
(I appreciate this might not be the right kinda question for this forum, but I can't find any other forums which look more geared up towards MS Office that look anything like as decent as this one - feel free to direct me elsewhere if you think it could help and think these threads are a bit dull for this place!)
