was wondering if anyone knows of an open source vpn client/server software thats easy to configure, has low overhead, and allows for multiple simultaneous connections?

OpenVPN is the only open source vpn server that I know of. Problem is that it doesn't fall under the heading of "easy to configure" last time I checked. You can check out their documentation here: http://www.openvpn.net/index.php/open-source/documentation/howto.html

    Windows Notes

OpenVPN for Windows can be installed from the self-installing exe file on the OpenVPN download page. Remember that OpenVPN will only run on Windows 2000 or later.

    Straight from the documentation.

I was looking in a different area. Some times I think I must be blind. I'll give this a whirl tomorrow and see how it goes.

OpenVPN is what we use here. It is a constant pain in our ass. The end-user configuration is maddening sometimes.

yea I was just reading the sample config files. Looks to be quite complicated. I'll probably try to find a detailed walkthrough.
