Pretty good. Used butternut squash, zucchini, onion, carrots, red and yellow peppers, asparagus, and potatoes.
I used too much curry paste and Sriracha (upped the recipe a bit due to volume), it was a tad spicy but enjoyed overall.

my sister and i did your vegi curry recipe. soooo good! inspired me to do an asian style lunch every day at work. rice with some kind of curry or stir fry dish.
