    @oni_dels I've heard of it, haven't tried it. i have so much effing beer right now, i don't know what to do with it. and Bobby has over 100 bottles in his cellar right now. we've joked that we need a pre-nup that includes all our beer haha

    Yeah, I'd like to see your setup as well. I'd guess its some sort of RIMS setup, but that temp display monitoring is awesome.

    I need to build a shelf off the compressor hump in the kegerator. I know I can fit 3 2.5gal kegs in there, possibly 4. Going to put a 3-tap draft tower on the top, haven't gotten around to it yet. Currently just using party taps on the inside.

    I just started a batch. From an IPA premix, i added lemon zest and cranberry peels to the primary fermenter. Very unsure what it'll do, i'm just experimenting with what should add taste/acidity/bitterness!

    Generally you don't see add ins for ipas. The idea is to let the hops come through as the flavor Carrier. Too !much addition may clash and clutter the flavors. I hope it comes through for you man

    Quick question: has anyone tried to make a gluten-free malt from scratch? One of my best friends has celiac's disease and i wanna try to make a tasty beer for him.

    Yep I've done my own buckwheat malt. It's far easier to go through a specialty shop though. Point him to:

    If extract brewing is acceptable you can also use Maillard Malts sorghum extract syrup. I've used this for all of my beer bases and have had great results.

    Edit: I'll try to remember to post more of my resources when I get home. I'm on a phone right now and typing is hard.

    A well-received GF recipe mine, brewed for summertime.

    It will not taste like traditional beer - but it's a pleasant drink that tastes more like what people suspect the Celtics brewed in medieval times.

    Geeklimit's Sunny Summer GF Ale

    BJCP Style: 10B American Amber Ale
    OG/FG/IBU: 1.0576
    FG: 1.015
    IBU: 30
    SRM: 4
    ABV: 5.5%
    Starting Water: 3.23 gallons
    Batch size: 2.5 gallons

    Malts

    Malted Buckwheat, 5 lbs
    Millet, 2 lbs

    Hops

    Hallertau, 0.75 oz at 3.1% AA for 60 minutes
    Goldings, 0.50 oz at 5.0% AA for 60 minutes
    Goldings, 0.50 oz at 5.0% AA for 3 minutes

    Adjuncts

    Cardamom Seed, 0.50 oz for 60 minutes
    Bitter Orange Peel, 0.50 oz for 60 minutes

    Yeast

    Wyeast American Ale II 1272

    Amendments and brew instructions

    1. Create yeast starter or start Wyeast pack, store at 66F
    2. Heat water to strike temperature, target temp after adding grains is 152F
    3. Add Calcium Chloride, 3 tsp, add to water and combine
    4. Add Termamyl Liquid Endo-Alpha Amylase, 1 T
    5. Add grains in removable bag, mash at 152F for 60 minutes
    6. Gelatinize grains at 195F for 120 minutes
    7. Add adjuncts and 60-minute hops in removable bag
    8. Boil for 57 minutes
    9. Add 3-minute hops in removable bag
    10. Boil 3 minutes
    11. Remove all grains, adjuncts and hops.
    12. Cool wort to 122F
    13. Add Amg-300L Liquid Exo-Alpha Amylase, 1 T
    14. Hold 122F for 60 minutes
    15. Cool wort to 66F
    16. Transfer to primary and oxygenate
    17. Pitch yeast
    18. Ferment 2 weeks at 64-68F
    19. Cold crash for 3 days at 44F
    20. Rack and mature for 2-4 weeks

    I enjoy the design, biology and chemistry of brewing. I also have 3 kids now - so if I had to sit and watch a pot boil (like I've done for ~7 years prior), I'd likely never get to brew.

    Note that you can brew quick, but I choose not to - I do the full, stepped rests and sometimes throw in first-wort hopping and other stuff that lengthens the brew cycle considerably. I plan for the brew process to take 8 hours.

    But...I don't have to be there for all of it, just the start & when it needs to chill. I stick around for a little, just to make sure there's no leaks in some of the modified hoses I've made, and that there's no waterfall coming out of the front.

    But basically, I do all the parts I enjoy the most, then start the machine and take the kids to the zoo.

    It was pretty easy, just bought a bolt of felt from the fabric store and sewed the pieces onto an old t-shirt. The hat was just smaller pieces glued to an old hat with a pumpkin stem. Sadly at the Halloween party a week before this Learn to Brew day, everyone thought I was the Jolly Green Giant...

    It's not like the legal status stopped anyone. From what I understand it was treated as a case of "it's fine if you don't get caught"... So mostly as long as you weren't being a dumbass it was fine.
