I have 0 knowledge on how to brew but considering the title I'd like to try using maple (or maple syrup)

Wow. Using 100% rye is a very bold move. The minimum % of rye to call it rye whiskey is only 51%; few distilleries go above 70% on that mash bill. I'll be curious to see how that tastes.
